Aam papad recipe is the Indian mango fruit leather made from sun dried mango pulp. These thin rolls of aam papad are chewy, tangy, sweet, delicious and especially ridiculously easy to make! Make some while mangoes and sunshine are abundant 🙂
This aam papad is the popular Indian snack made especially when fresh mangoes are in season. These dehydrated rolls of mango is just tasty and no one can stop at one.
Making aam papad is very simple and easy. The hands on time especially for making this mango fruit leather is just 5 minutes. You can sun dry or even dry this oven also. We have a very good sunshine here and I prefer to sun dry the mango puree always.
Below I have shared the method for making mango fruit leather in oven.
How to make aam papad in oven:
- Prepare mango puree with required sugar. Also preheat oven at 150C
- Pour the prepared puree on baking sheet as thin single layer. You can line the sheet with parchment paper or grease the sheet with ghee slightly.
- Bake in the oven for 4-6 hours. The top should become dry and non sticky. The leather should easily peel off.
You can serve aam papad as snack. Store airtight.

How to make aam papad recipe (step by step):
1. Take peeled and roughly chopped mango along with a sugar in a mixer jar. Blend to a smooth puree.
2. Grease a big plate or tray with few drops of oil or ghee.
3. Pour the mango puree and spread as thin single layer. Make a uniform layer as much as possible.
4. Sun dry for 2-3 days.
5. Once dried make vertical lines with sharp knife.
6. Make small rolls. You can also roll in a small butter paper or chocolate wrapper. Store airtight and serve as snack.

- 2 mangoes ripe
- 2 tablespoons sugar
- few drops of ghee or oil
