This ajwain paratha is a very easy paratha recipe that can be made for quick breakfast or lunch and also dinner. It is is just a variation in plain paratha with addition of ajwain seeds or carom seeds.
Ajwain seeds (omam) has loads of medicinal benefits and it is good to include it in our diet. Carom seeds helps very much in digestion and it is often added in deep fried recipes like bajji, samosa etc.
Ajwain paratha is made by folding method unlike regular parathas. Because of folding method, ajwain paratha is flaky yet soft when had hot. I would suggest having these ajwain parathas hot off the stove. You can make these parathas with ajwain especially when the side dish is rich and heavy. Addition of carom seeds will offset the richness and makes easy to digest.
It is best to fry ajwain paratha with ghee on a hot cast iron tava. The tava should be really hot and heavy to get evenly cooked perfect ajwain parathas. You can also use oil for frying the parathas.
To make ajwain paratha recipe, I have used organic whole wheat flour with some barn. This makes the parathas look a bit rustic than those made with super fine wheat flour. I do not prefer super fine flour in cooking except while baking.
Serve ajwain paratha with north Indian side dish recipes like paneer tikka masala, paneer butter masala, palak paneer etc. You can even serve it with dal fry for a comforting meal.

How to make ajwain paratha recipe with step by step photos.
Take flour, salt, oil in a bowl.
Mix well, add required water and make a soft and supple dough.
Rest the dough for 30 minutes
Divide the dough into 7-8 equal sized balls.
Take a dough ball and dust it slightly with flour.
Roll into a thin circle. Spread some carom seeds all over.
Make tri fold and roll into a triangle
Fry in hot tava with ghee from both sides, till light brown spots appear.
Smear some ghee and keep the parathas stacked. Serve ajwain paratha with side dish.

1. Too much of ajwain will cause over heat in body. Just a small pinch of ajwain in each paratha is sufficient.
2. You can add the ajwain in paratha dough while kneading and make like regular rotis too.
