I made these carrot pancakes using my basic eggless pancake recipe and just added grated carrots to the batter. I vouch for my eggless pancake recipe. You will make the best ever eggless pancakes with this recipe and when you add some carrots, it is a double treat.
To make carrot pancakes I have used whole wheat flour and winter special red carrots or Delhi carrots. You can however use plain flour and regular orange carrots too.
For flavor I have used vanilla extract. You can also use cinnamon powder or nutmeg powder. Also you can add slivered nuts for texture.
These pancakes turn out amazingly fluffy, delicious and not overly sweet so that you can enjoy it with a hearty drizzle of honey or maple syrup. If you want to make these carrot pancakes more special serve it with a scoop of vanilla ice cream or whipped cream.

Boil and slightly cool the milk. Add butter to the warm milk and let it melt.
Stir in vanilla and add sugar to the milk. Whisk well.
Mix wheat flour, salt and baking soda. Add the flour to the wet ingredients and mix swell. Add more milk if needed to make a thick flowing batter.
Fold in the grated carrots and mix.
Heat a tava or griddle. Pour a ladle full of pancake batter on hot tava. Do not spread.
