Wanna perk up the taste of your regular paniyaram? Make this healthy carrot paniyaram and enjoy! Easy and tasty breakfast or snack in 15 minutes. Less oil, gluten free, vegan!

If you are looking for ways to sneak in veggies in kids diet, idli, paratha, paniyaram are excellent options. You can just make puree of the desired vegetable, mix to the batter or dough and you are good to go.

Adding vegetable puree increases the nutrition, takes care of the daily quota of the vegetable and makes the dish attractive. Another way is to add veggies to the chutneys. You can try carrot chutney, mixed veg chutney, zucchini chutney.

This carrot paniyaram is something I often make at home. With some carrots and leftover idi batter you can make healthy vitamin packed breakfast in 15 minutes.  Instead of carrot yo can use beets, capsicum, tomatoes too.

You can use slightly sour batter for making this carrot paniyaram recipe. The sweetness of carrot will nicely offset the sourness of the batter. I have added shallots or pearl onions in this recipe and that elevates the color and taste very well. I have also used bell peppers for crunch and taste.

How To Make Carrot Paniyaram Step by Step

1.Take idli batter in a mixing bowl. Add carrot puree to it and mix well.

2. Heat 2 teaspoons oil in a small pan. Temper with mustard seeds. Add urad dal, channa dal, curry leaves and chopped green chilies. Saute for 2 minutes.

Add chopped onions and bell peppers. Add little salt if required. Saute well for 5 minutes.

3. Add this veggies mixture to the idli batter and mix well.

4. heat an appe pan and grease each mould with few drops of oil. Spoon in the batter and cook for 3-5 minutes until paniyaram is well cooked and turns golden.

Serve carrot paniyaram hot.

Ingredients
  

  • 1 cup idli batter
  • 1/2 cup thick carrot puree
  • 1/2 bell pepper chopped
  • 1/2 cup pearl onions chopped
  • 1/2 teaspoon mustard seeds
  • 1 teaspoon channa dal
  • 1 teaspoon urad dal
  • 2 green chilies
  • 10-12 curry leaves
