I made this cherry hand pies last month when fresh cherries were abundant in market. I had few readers write to me asking for few easy recipes with fresh cherry.I have posted couple of easy cherry recipe here last years. This time I wanted to try something new as well as easy.
The cherry hand pies turned out to be super delicious. The best short crust pastry I have ever made. So crispy and flaky, to be frank I did not expect such a great pastry when I started making. The cherry filling was so delicious and once baked it did magic. The addition of chocolate chips were good but let me tell you the cherry filling itself is too on its own. You can absolutely leave out chocolate chips yet make a super delicious cherry hand pies. I have made round hand pies unlike the common rectangular ones just for fun.
To make cherry hand pies recipe first let us make the pastry dough and refrigerate it. Then the discs should be cut out from the dough and refrigerated again. It is important to refrigerate the dough and shaped discs to get really flaky pastry crust. While the dough is resting in fridge we can make the cherry filling. It is a very simple and easy filling with just 3 ingredients and tastes great on its own too. We have to make the filling and cool it thoroughly before making the pies.
Serve cherry hand pies warm or at room temperature. They taste absolutely delicious when served warm! These keep well for 2 days.

Step by step cherry hand pies recipe.
1. Take all purpose flour, sugar and vanilla pith scrapped in a mixing bowl.
2.Add the cold butter cubes to it.
3. Mix well with finger tips breaking the butter cubes through the flour. The whole mixture should resemble crumbs.
4. Add 4-6 tablespoons water at intervals and bring the dough together. Do not knead it. Just bring the dough togther and mix very gently. Now flatten the dough into a big disc of about 1/8″ thick and place between parchment papers. Refrigirate for an hour.
5. After an hour remove the dough disc and cut out small circles as shown. Refrigirate the shaped circles too.
6. In the mean time wash and pit about 1 1/4 cups of fresh cherries.
7. Place the cherries in a heavy bottomed pan. Add sugar and mix well.
8. Cook in medium flame till the sugar is completely dissolved and cherries are cooked and soft. Add lemon juice and switch off the flame.
9. Allow the filling to cool throughly.
10. To make pies take a small cut disc and spoon in some filling in the center. Place few chocolate chips on it. Cover with another disc and seal the edges with a fork. make few slits on the pie.
11. Arrange the pies in a baking tray and bake at 200C for 12-15 minutes in a preheated oven. The top will turn golden brown and the edges will be crispy. This shows the doneness of the pies. Allow the pies to cool for 10 minutes. Serve chocolate cherry hand pies warm or at room temperature.

- 4 tablespoons sugar
- 1/2 teaspoon lemon juice

2. You can use pineapple jam or any marmalade in place of cherry filling to make this pie.
