I like to try dense comforting coffee cakes rather than frosted cakes a lot. These days I try as much as possible to use only whole wheat flour in my baking recipes. I buy unrefined organic whole wheat flour and it suits very well for my rustic cakes. I make such cakes like tutti frutti cake, banana bread, gulkand cake for a quick tea. This dates and walnut cake was in my list to try.
I made this date walnut cake using my mini bundt cake pan and loved it a lot. Not only it tastes great also looked very cute 🙂
This eggless date walnut cake is healthier compared to regular cakes. Whole wheat flour, raw cane sugar and good amount of dates. This delicious coffee cake is a healthy treat for toddlers and kids. A perfect snack to pack in lunch too.
To make date walnut cake recipe I have used olive oil. You can even use soft butter instead of olive oil for this eggless cake.

How to make date walnut cake recipe
Soak pitted dates in 1 cup hot water. Soak for around an hour.
Preheat oven at 180C.
Take condensed milk and oil in a mixing bowl. Add vanilla essence and mix well till the mixture turns light.
Sieve baking powder, baking soda and whole wheat flour well. Add this dry mixture to wet ingredients and whisk well.
Drain the soaking dates and add to the flour mixture. Add chopped walnuts to the batter and mix well.
Take a 7 inch round cake. Grease and dust it well. I dusted it with cocoa powder. Pour the cake batter and tap well. I used mint bundt cake pan. Bake in the preheated oven for 35-40 minutes.
Once done and a tester comes out with very few crumbs at multiple places, remove the cake tin from oven. Let the cake cool in the tin for 10 minutes.
Now remove the cake from tin and gently flip. Allow the cake to cool thoroughly before slicing. Serve date walnut cake with coffee.
