This potato salad is a delicious mix of boiled potatoes, chickpeas along with some chopped onions, tomatoes. The whole salad is tossed in a very mild yet flavorful lemon juice dressing.

What Do You Need To Make This Potato Salad?
Potatoes- Any type of potato that holds its shape well after boiling works here. While I have just added boiled potatoes, you can grill or toast them slightly if you don’t mind adding few drops of oil. Roasted potatoes will be very delicious in this salad.
Chickpeas– Here I have used raw chickpeas that I soaked, boiled and drained. You can easily use canned chickpeas in this recipe. Just make sure to drain and rinse thoroughly. For some added crunch you can also add roasted chickpeas.
Other Ingredients– For texture and flavor you can add chopped onions, tomatoes as I did. You can also throw in some grated carrots, mangoes for flavor.
Dressing- The dressing of this chickpea potato salad is a very simple & mild one. Its just a mixture of lemon juice, salt and pepper powder. You can totally play with the ingredients in dressing and add some
- mustard etc.
You can serve this simple chickpea potato salad as side dish or main course along with some soup or toast or pasta.
You can also use this salad as filling for your sandwich, tortilla or in kathi rolls.

Potato Chickpea Salad Recipe
Potato chickpeas salad recipe,healthy salad recipes for summer
- 1 large potato boiled,peeled and cubed
- 3/4 cup chickpeas soaked,boiled and drained
- 1 small onion thinly sliced
- 1 large tomato cubed
- 1/2 teaspoon pepper powder
- 1/2 teaspoon cumin powder
- A pinch of chaat masala powder
- 1/2 tablespoon lemon juice
- 1 teaspoon finely chopped cilantro leaves
- You can use boiled chickpeas if you have it handy,else soak chickpeas in plenty of water for 8 hours/overnight,drain and pressure cook until soft. Drain and set aside.
- Boil,peel and cube the potato
- Chop onion and tomato
- Take everything in a mixing bowl,add salt,cilantro leaves,chaat masala powder,cumin and pepper powder. Mix well
- Add lemon juice,toss well and serve potato chickpeas salad immediately.
