Potato wedges are simple potato snack served in fast food joints like McDonald along with meals. Potato is a huge favorite among kids and this potato wedges will also be liked by them. When made at home , these potato wedges makes a good snack for toddlers and kids once in a while. Potato is as such healthy but when deep fried it is better to consume in moderation. These are very easy to make too with few simple ingredients.

Potato wedges can be deep fried, baked, shallow fried and air fried. Here I am sharing the recipe for fried potato wedges and notes on how to bake them. There are many variations in how to make potato wedges. The are so many variations in seasoning like piri piri wedges, cheese potato wedges etc.

Potato is such a versatile tuber that tastes good whichever it is cooked. It can be used to make wafers, curry, pulao, stew, bread, cutlet, flat bread ,vada and many many more.

I often make these potato wedges recipe for a quick snack or as side with sandwich. I keep the seasoning simple and minimum usually. Here I am showing the deep fried method but I often bake potato wedges too.

To make perfect crispy potato wedges it is important to follow some points. The starch from potatoes has to be removed before frying. This step helps in retaining the crispiness in the wedges for long time. Next the potatoes should be cut into same sized wedges. This way the frying will be uniform. I like to add a bit of rice flour to the cut potatoes. Adding rice flour is more tasty than corn flour. I add usually dried oregano, dried basil and chili flakes. You can add your favorite herbs to the seasoning. Smoked paprika, cayenne pepper, thyme, rosemary are the popular spices used on potato wedges usually.

These crispy potato wedges area good finger food and part snack. These wedges are also a great snack for toddlers and kids. If made with just chili powder and salt, these wedges can also be served with India food. If making for party this recipe can be easily doubled or tripled.

Potato wedges are usually served as side dish. They can also be served as snack with tomato sauce. Indian dips like green chutney, sweet chutney do not go well with these wedges.

Ingredients
  

  • 2 big potatoes
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1 teaspoon chilli flakes
  • 1/2 tablespoon oil
  • Salt
  • water

Instructions
 

  • Wash and scrub the peel off the potatoes.
    Cut into same sized wedges.
  • Bring a large pot of water to boil with a pinch of salt.
    Add the cut wedges of potatoes and boil for 3-4 minutes.
  • Drain on a clean kitchen towel to remove excess moisture.
    Into a mixing bowl add all the seasoning ingredients. Mix well.
    Toss the potato wedges and mix.
  • Heat oil for deep frying.
    Deep fry in hot oil in medium flame until the wedges turn crispy and golden.
  • Drain excess oil and serve hot.

How to make potato wedges recipe

Cut into same sized wedges.

Bring a large pot of water to boil with a pinch of salt.
Add the cut wedges of potatoes and boil for 3-4 minutes.

Drain on a clean kitchen towel to remove excess moisture.
Into a mixing bowl add all the seasoning ingredients. Mix well.
Toss the potato wedges and mix.

Heat oil for deep frying.
Deep fry in hot oil in medium flame until the wedges turn crispy and golden.

Drain excess oil and serve hot.

How to make baked potato wedges.

Preheat oven at 200C

Prepare the potato seasoning mixture by following till step 7

Spread the cut potatoes on a greased cookie sheet in a single layer.

Bake for 15 minutes.

Remove from oven,flip and bake for 10-15 more minutes.

Serve hot.
