Red velvet cookies recipe with step by step photos. We all like red velvet themed desserts as they are very attractive to look at. Yeah more than taste red velvet cakes, cookies are popular for their elegance.
I always wanted to bake a red velvet cake or cookie but extremely hesitant about using so much of artificial color. Then I saw few recipes using beetroot juice for coloring cookies and cakes. I liked the idea and made these red velvet cookies that way. But that is not all, these red velvet cookies have more elements to impress you.
These red velvet cookies are made of whole wheat flour, no baking powder or soda and contains beet. How much healthier can a cookie get 🙂 To make it really red velvet I have also added cream cheese. Addition of cream cheese gave these cookies a very rich flavor, taste and wonderful melt in mouth texture.
To make red velvet cookies you need whole wheat flour or maida, fresh and undiluted beetroot juice, cream cheese, cocoa powder and sugar, butter. I have used unsalted butter as cream cheese contains salt. Use best quality cocoa powder as we are trying to extract cocoa flavor and taste with very less quantity.

Step by step red velvet cookies recipe.
1.Take soft butter and sugar in a mixing bowl. Cream together until light and fluffy.
2. Add cream cheese, beet juice and mix thoroughly.
3. Add wheat flour, cocoa powder and make a dough. Do not add water or milk to the dough.
4. Wrap the paper in between butter papers and refrigerate for an hour.
5. Roll the dough into a circle of 1/4 in thickness.preheat oven at 180C.
6.Cut on heart shaped or any shapes as desired. Place on the greased baking sheet. Top with powdered nuts.
7.Bake in the hot oven for 10-12 minutes. The cookies should be slightly hard and crispy at the edges. The cookies turn very crispy and melt in mouth on cooling. Store red velvet cookies airtight and serve as required.

1 CUP = 250 ml
Ingredients

- 1 cup white or cane sugar
- 2 tablespoons cocoa powder

2. Do not dilute the beet juice. Just puree the beet and pass through a sieve to get juice.
