Sev puri Recipe – Sev puri is a popular Indian chaat or street food. With this easy recipe you can make this chaat at your home easily!
We all Indian chaat and street food recipes at our home. I prefer to make these dishes at home as making chaat recipes at home is real fun. Once you have various chutneys ready, you can put together any chaat recipe in no time.
This sev puri recipe is easy and I make it very often at home. It is one among the popular Indian chaat recipes and very quick to make.
What is sev puri?
For the uninitiated, sev puri is a delicious mix of fried puri, sev, boiled potatoes, boiled green gram and assorted spice powders finally topped with some flavorful curd is sev puri for you!
It is spicy, sweet, tangy and flavorful with a mix of various textures, flavors and taste. As like any Indian chaat this sev puri is also very versatile and you can play with ingredients.
Ingredients for making sev puri
To make sevi puri you can use papdi or small puri used for pani puri. Here I have used pani puri pooris in this recipe. You can use flat papdi puris if you prefer.
Other main ingredients are mashed potatoes and boiled moong dal. Then toppings are spiced curd, chopped onions, tomatoes, cilantro leaves and fine sev. You can add these ingredients are per your taste.
The chutneys required for making sev puri are green chutney and sweet chutney. In some recipes spicy red chutney is also used.
It is very quick to make sev puri recipe at home if you have all the ingredients handy. It is just assembling task. You can even set all the ingredients and have everyone assemble their own sev puri. That would be fun!
Serve sev puri once assembled immediately.

How to make sev puri (step by step)
1. First begin by boiling the potatoes and moong dal. Boil, peel and roughly mash the potatoes. Do not mash then thoroughly.
2. Take mashed potatoes and boiled moong dal in a mixing bowl.
3. Add fresh curd in a mixing bowl and whisk till smooth. To the that add rock salt, chaat masala powder, chili powder, sugar and mix very well. Set aside.
4. To make green chutney grind together the ingredients mentioned under green chutney. Mix well and set aside.
5. To make sweet chutney: Bring 1/2 cup water to boil in a pan. Add dates and tamarind. Cook in medium flame for 10 minutes. To the that add grated jaggery, rock salt, chili powder, dry ginger powder, chaat masala powder and mix well. Cook for 5 more minutes. Remove from flame and allow to cool. Once cold grind to a fine paste. This is sweet chutney.
6. Once all these ingredients are we can assemble sev puri easily.
7. Take a fried puri and make a dent in the center. Fill with potato moong mixture. Add sweet chutney, green chutney, curd and sev. Also add tomato, onion and cilantro leaves. Finally top with more sev. Serve sev puri immediately.

Sev Puri Recipe Mumbai Style
1 CUP = 250 ml
Ingredients
Potato filling for sev puri
- 25-30 mini puris
- 2 potatoes boiled, peeled and slightly mashed
- 3 tablespoons whole green gram boiled
- 1/2 teaspoon chili powder
- rock salt
- 1/2 teaspoon chaat masala powder
- 1/4 teaspoon amchur powder
For making spiced curd
- 1/2 cup curd
- Rock salt
- 1/2 teaspoon chili powder
- 1 teaspoon sugar
- 1/2 teaspoon chaat masala powder
For green chutney
- 1 cup coriander leaves tightly packed
- 1/4 cup mint leaves
- 3 green chilies
- Small piece of ginger peeled
- 1 teaspoon lemon juice
- 1 teaspoon roasted cumin powder
- A pinch of chaat masala powder
For sweet chutney
- 10 seedless dates
- 1 lemon sized tamarind ball
- 3 tablespoons grated jaggery
- 1/2 teaspoon roasted cumin powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon dry ginger powder
- 1/2 cup to 1 cup water
- Rock salt
For garnishing sev puri
- Chopped cilantro leaves
- chopped onion
- Chopped tomatoes
- Fine sev
Instructions

- Grind together the ingredients mentioned under green chutney. Mix well and set aside.
Making sweet chutney
- Bring 1/2 cup water to boil in a pan. Add dates and tamarind. Cook in medium flame for 10 minutes. Add grated jaggery, rock salt, chili powder, dry ginger powder, chaat masala powder and mix well. Cook for 5 more minutes. Remove from flame and allow to cool. Once cold grind to a fine paste. This is sweet chutney.
