Date walnut cake recipe | Eggless dates walnut bundt cake

date walnut cake is a tasty coffee cake that is egg free and made of whole wheat flour with dried dates and walnuts.

Ingredients

  • 1.5 cups whole wheat flour
  • 3/4 cup dried dates, pitted
  • 1/4 cup walnuts, broken
  • 1/2 cup sweetened condensed milk
  • 1/4 cup oil
  • 1/4 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla essence

Instructions

  • Soak pitted dates in 1 cup hot water. Soak for around an hour.
  • Preheat oven at 180C.
    Take condensed milk and oil in a mixing bowl. Add vanilla essence and mix well till the mixture turns light.
  • Sieve baking powder, baking soda and whole wheat flour well. Add this dry mixture to wet ingredients and whisk well.
  • Drain the soaking dates and add to the flour mixture. Add chopped walnuts to the batter and mix well.
    Take a 7 inch round cake. Grease and dust it well. I dusted it with cocoa powder. Pour the cake batter and tap well. I used mint bundt cake pan. Bake in the preheated oven for 35-40 minutes.
  • Once done and a tester comes out with very few crumbs at multiple places, remove the cake tin from oven. Let the cake cool in the tin for 10 minutes.
    Now remove the cake from tin and gently flip. Allow the cake to cool thoroughly before slicing. Serve date walnut cake with coffee.
