- 1 cup thick coconut milk
- 1.5 cups thin coconut milk
- .75 cups chopped vegetables
- 3 tablespoons moong dal
- 1 onion sliced
- 2 green chilies
- 6 cashews broken
- 1 teaspoon mustard seeds
- 10 curry leaves
- 2 teaspoons oil
- Salt to taste
Pressure cook moong dal until mushy and well cooked.
Extract thick and thin coconut milk from 1 medium sized coconut.
Steam vegetables for 5 minutes and set aside.
In a pan add 2 teaspoons oil. Temper with mustard seeds and curry leaves.Once the oil is hot add slit green chilies ans saute for a minute. Add cashews and saute well. Add chopped onions and saute for 2 minutes. Add cooked moong dal and saute well.
Now add the vegetables and saute for a minute. Add 1/2 cup water and bring to a boil.
Add thin coconut milk and mix well. Add required salt and mix well. Cook for 5-6 minutes.
Now add the thick coconut milk and simmer for 2 minutes.
Remove from flame and serve sodhi with rice.
