Ingredients

  • 1 cup thick coconut milk
  • 1.5 cups thin coconut milk
  • .75 cups chopped vegetables
  • 3 tablespoons moong dal
  • 1 onion sliced
  • 2 green chilies
  • 6 cashews broken
  • 1 teaspoon mustard seeds
  • 10 curry leaves
  • 2 teaspoons oil
  • Salt to taste

Instructions

  • Pressure cook moong dal until mushy and well cooked.
  • Extract thick and thin coconut milk from 1 medium sized coconut.
  • Steam vegetables for 5 minutes and set aside.
  • In a pan add 2 teaspoons oil. Temper with mustard seeds and curry leaves.Once the oil is hot add slit green chilies ans saute for a minute. Add cashews and saute well. Add chopped onions and saute for 2 minutes. Add cooked moong dal and saute well.
  • Now add the vegetables and saute for a minute. Add 1/2 cup water and bring to a boil.
  • Add thin coconut milk and mix well. Add required salt and mix well. Cook for 5-6 minutes.
  • Now add the thick coconut milk and simmer for 2 minutes.
  • Remove from flame and serve sodhi with rice.
