Ingredients

  • 1/2 cup fine rava/ sooji
  • 1 /2 cup sugar
  • 1 cup water
  • 1/4 cup ghee
  • 1/2 teaspoon cardamom powder
  • 4 tablespoons chopped cashews
  • 2 tablespoons raisins
  • Few drops of yellow food color
  • A small pinch of saffron

Instructions

  • Heat 2 tablespoons ghee in a pan. Add chopped cashews and raisins and fry well. Remove toa plate.
  • Add rava to the same ghee and roast till nice aroma wafts out.
  • Now add water to the same pan and bring to a rolling boil
  • Add the roasted rava and stir continuously till the rava gets cooked well. Make sure no lumps are formed.
  • Once the rava is completely cooked add sugar and mix well.
  • Now the kesari mixture will loosen a bit. Now add food color, ghee and saffron.
  • Keep cooking till the mixture thickens and leaves the sides of the pan.
  • Add fried nuts and remove from flame. Serve kesari bath hot or warm

Notes

1. Add sugar only after the rava is completely cooked
2. You can increase or decrease sugar and ghee
3.food color is optional
