Ingredients

  • Wet ingredients
  • 1/4 cup olive oil
  • 2/3 cup sugar
  • 1 tablespoon lemon juice
  • 1 cup water
  • Vanilla extract
  • 1 teaspoon coffee
  • Dry ingredients
  • 1 cup maida or wheat flour
  • 4 tablespoons cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • For choco lava
  • Dark chocolate squares around 200 grams

Instructions

  • Preheat oven at 180C. Into a mixing bowl, add oil, water,vanilla and sugar. Mix very well. To that add lemon juice. Mix well.
  • Sift flour, cocoa powder, baking powder, baking soda and pinch of salt over the wet ingredients. Mix well.
  • Divide the batter among six large muffin liners or ramekins. You can also use regular muffin liners.
  • Place dark chocolate squares in each liner and slightly push it inside.
  • Bake in the preheated oven for 25-30 minutes.
  • Let cool for 10 minutes. Dust with icing sugar and serve eggless choco lava cake with some cherries or strawberries.

Notes

1. If you place very less chocolate in the batter, lava will not be formed. 3-4 dark chocolate squares in each serving is required.
2. You can use maida or wheat flour to make eggless choco lava cake
