Take wheat flour, salt, baking powder,pepper powder, dried herbs and chili flakes in a mixing bowl. Mix well
To the flour mixture, add 60 grams very cold butter, cut into pieces, 50 grams grated cheese and mix well. Mix well to incorporate the butter well. The mixture should resemble crumbs.
Now add 2-3 tablespoons milk and bring everything together to make a dough. Do not knead very hard. Cover and refrigerate for 30 minutes.
Preheat oven at 180C. Roll the dough into a circle.
Slice into desired shape and arrange in a greased baking sheet.
Bake in the hot oven for 18-20 minutes. Serve herb and cheese cookies with coffee.
Notes
1. Do not try to substitute oil for butter in this recipe 2. You can even add cumin and chili powder instead of dried herbs
