Gluten free veg muffins with loads of veggies. Easy to bake beginner recipe
1cupvery finely chopped veggies
Oil for greasing
First finely chop the veggies. I used a food processor to chop the veggies. Preheat oven at 180C
Take gram flour, rice flour, salt and baking powder in a mixing bowl. Mix well. Add the chopped vegetables and mix well. Add curd and whisk well. Now add about 1/4 cup water and mix well. The batter should be of pancake batter consistency.
Grease a muffin tin very well. Pour the prepared batter in each mould. Top with grated cheese.
Bake till the cheese melts and turns slightly golden. I baked for 18 minutes. Let cool for 5 minutes and serve veg muffins warm.
1. You can use veggies of choice 2. If you wish you can saute the veggies in oil for 5 minutes before adding the flours.
