Take all purpose flour, sugar, salt , cheese and dried herbs in a large bowl.
Add the cold butter cubes to the flour. Tip in the butter to the flour. Rube with your finger tips until the mixture resemble coarse crumbs.
Add 2-3 tablespoons ice cold water at a time and very gently bring the dough together. Do not knead the dough too much. Wrap the dough in a cling wrap or butter paper chill for an hour.
In the meantime let us prepare the filling. Heat 2 tablespoons butter and1 teaspoon olive oil in a pan. Add cubed onions and 1/2 teaspoon sugar. Saute in low flame for 3 minutes. Add dried parsley, basil and mix well. Saute till the mixture turns sticky. Cool for 15 minutes.
Preheat oven to 220C. Take the cold dough and rest it for 5 minutes.
Roll into a circle with 1/4' thickness. Twist the edges and make a border.
Spread the onion mixture evenly. Arrange the cubed paneer and cherry tomato halves over it.
