Mix minced garlic cloves, chili flakes into soft butter and whisk well. Add salt if using unsalted butter. Set aside.
Making Herb Garlic Bread
Take 1 cup luke warm water in a mixing bowl. Add 3/4 tablespoon active dry yeast, 2 teaspoons sugar and mix well. Set aside the yeast to raise.
Once the yeast is frothy, add 3 cups flour, pinch of salt, 2 teaspoons olive oil, 1/2 teaspoon chili flakes, 1 teaspoon dried mixed herbs to it. Mix well and start kneading. Add more water if needed and knead.
The dough will be very soft and slightly sticky. Apply some oil in the palms and knead well. Do not be tempted to add more flour. Work on the dough and knead well for 10 minutes. set aside the dough for proofing (1- 1.5 hours)
In the mean time take soft butter in a small bowl. Add minced garlic cloves, salt, chili flakes and mix very well.
Once the dough is proofed punch it back and knead again slightly.
Roll the dough in to a thick circle. Place a blob of prepared garlic butter over it. spread it well.
Sprinkle some grated cheese if using. Roll the dough into a tight log.
Place the rolled log in a greased and floured loaf tin. Cover with a damp towel and set aside for second raising for 30 minutes.
Preheat oven at 2o0C. Bake for 40-50 minutes. Allow the bread to cool for 5 minutes in the tin and then cool on a wire rack before slicing. Serve garlic loaf sliced with soup.
Notes
1. Baking time varies from oven to oven. Keep checking after 35 minutes 2. You can use maida instead of wheat flour 3. Cheese is optional
