1/4cupblack gram flour/urad dal flourdry roasted before grinding
3tablespoonsroasted gram flour
1/4cup+ 2 tablespoons thick coconut mik
Salt
Warm water
Oil
Instructions
Grate the coconut and extract thick milk. We need around 1/4 cup+ 2 tablespoons of coconut milk. Warm the coconut milk for few minutes in low flame. Do not let it boil.
In a mixing bowl take rice flour, roasted black gram (urad dal) flour, roasted dal (pottukadalai) flour and 2 teaspoons hot oil. Add required salt and mix well.
Next add the warmed coconut milk and mix well. Start kneading, if needed add little warm water to make soft pliable dough.
Take a small pinch of dough and press gently over the mould. You will get a small strip with lines. Join both the ends to form a ring. Repeat the same with remaining dough.
Heat oil for deep frying. Deep fry the prepared rings in batches.
Deep fry in medium flame until the rings turn golden brown.
Cool thoroughly and store seepu seedai in airtight container. Serve with coffee.
Notes
1. Do not let the coconut milk boil. Just gently heat it. 2. You can ad cumin seeds for flavor
