Ingredients
25okras
1/2teaspoonpepper powder
2tablespoonscorn flour
Salt
For sauce
1/2red bell peppercubed
1/2green bell peppercubed
1/4cupchopped spring onion whites
4-6garlic clovescrushed
2teaspoonssoy sauce
2tablespoonstomato sauce
1/2teaspoonpepper powder
Salt
Sesame oil
3tablespoonschopped spring onion greens
Instructions
Wash and pat dry the okras thoroughly. Cut into 1.4" pieces.
Take the chopped okra in a mixing bowl. Add corn flour,pepper powder and some salt. Toss well.
Heat tablespoons oil in a kadai. Shallow fry okra in batches in low flame. It takes around 15 minutes to shallow fry the okras until crispy. Remove the fried okra to a kitchen towel.
In the same oil add chopped spring onion whites. Saute for a minute. Add crushed garlic and saute well.
Add chopped bell peppers and saute well for 2 minutes.
Add tomato sauce,soy sauce, pepper powder, salt and mix well. Cook for 4-6 minutes in medium flame.
Once the sauce in well cooked, add the fried okras and toss well. Toss in high flame for a minute or two. Garnish with spring onion greens and remove from flame. Serve chilli garlic okra hot.
Notes
1. You can deep fry the flour tossed okra if you prefer 2. Serve immediately else okra will turn soggy.
