Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup maida/all purpose flour
  • 1/2 cup oil
  • 1/2 cup brown sugar
  • 1/4 cup choco chips
  • 1 Vanilla bean/1.2 teaspoon vanilla essence
  • 1/8 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 3/4 cup banana puree

Instructions

  • Peel the overripe banana,and peel the apple (if using). Now blend the fruits together to get the pulp,do not add water. The puree should measure 3/4 cup. You can use banana alone or combination of apples-bananas. Preheat oven at 170C.
  • Measure sugar and oil,add to a mixing bowl. Add scraped vanilla pith and also the bean to the bowl, Mix well to incorporate.
  • Now add the fruit puree and mix well. Remove the vanilla bean.
  • Sift wheat flour,maida,salt and baking powder. Add it to the wet ingredients and mix well. Whisk well in the same direction to make the batter. Do not over beat.
  • Fold in the choco chips and mix gently.
  • Pour this batter into greased and dusted loaf tin,tap slightly to level and release air gaps.
  • Bake in the preheated oven for 30-35 minutes,until the top becomes golden and a tester comes out clean.
  • Allow the cake to cool in a wire rack for minimum 10 minutes,slice and serve the egg less banana bread with coffee.

Notes

1. You can use sunflower/olive oil.
2. You can use honey instead of sugar
3. Adding the whole vanilla bean while mixing will intensify the flavor.
4.Instead of choco chips you can add raisins/almonds or just leave it plain too.
