Eggless melting moments cookies are delicious,fragile and literally melt in moments cookies made with butter,cornflour and maida,very easy to bake delicious and pretty cookies!

Ingredients

  • 3/4 cup maida/all purpose flour
  • 1/2 cup corn flour
  • 1/8 +1/8 cup powdered sugar
  • 100 butter 1/2 cup
  • 1/8 cup crushed toasted almonds
  • 1 vanilla bean scrapped

Instructions

  • Take the powdered sugar and softened butter in a mixing bowl. Add the scrapped vanilla pith to it and mix well. Beat this mixture very well in the same direction until ut turns soft and fluffy.
  • Sieve cornflour,maida,salt and mix well. Add the toasted almonds and mix well.
  • Bring the dough together and knead until just mixed. Do not add water/milk to the dough.
  • Wrap the dough in a butter paper and freeze for 1-2 hour.( I did for just 40 mins)
  • Preheat oven (170C)before 15 minutes you are ready to bake the cookies
  • Pinch out small balls from the cookie dough and roll over the powdered sugar( do not flatten the balls) and arrange in a greased and dusted baking sheet.
  • Bake the cookies for 8-10 minutes,let the cookies cool for 10 minutes. Store eggless melting moments cookies in an airtight jar.

Notes

1.With the given amount of sugar,cookies are very mildly sweet,increase the sugar by 1-2 tablespoons if you prefer sweeter cookies
2.You can leave out or add any nuts of your choice
3.These cookies should not change in color,so be sure to check the bottom of the cookies for very slight change in color and remove from oven before the top changes in color.
