Ingredients

  • 1 medium head cauliflower florets separated
  • 1 onion roughly chopped
  • 2 big tomatoes roughly chopped
  • 10 cashews soaked in warm water
  • Salt
  • 1 teaspoon kasuri methi
  • Whole spices
  • 1 bay leaf
  • 1 teaspoon fennel seeds
  • Small piece of cinnamon stick
  • 2 cloves
  • 1 black cardamom
  • 2 green cardamoms

Instructions

  • Bring a pan full of water to rolling boil. Add the cauliflower florets along with a pinch of salt and turmeric powder. Boil for 5-7 minutes. Drain and set aside. Add about 2 tablespoons rice flour, 1/2 teaspoon chili powder to the florets and toss well.
  • Deep fry or shallow fry the cauliflower florets until golden brown. Set aside.
  • Grind roughly chopped onions and tomatoes to a fine paste. Soak cashews in hot water for 10 minutes. Grind to a fine paste too.
  • Heat a kadai with 1 tablespoon oil. To the hot oil, add bay leaf, cloves, cinnamon stick, cardamom and fennel seeds. Saute till nice aroma wafts out.
  • Add the onion tomato puree and mix well. Cook in medium flame flame until oil separates out.
  • Add about 3/4 cup water and bring to a boil.
  • Add the cashew paste and mix well. Season with salt.
  • Mix well and cook till the gravy thickens.
  • Add the fried cauliflower florets and simmer for 3-4 minutes. Add crushed kasuri methi and mix well. Remove from flame, serve cauliflower gravy hot.

Notes

1. You can fresh cream if needed at the end.
2. You can grind cashews with some milk for rich taste.
