Badam nan khatai recipe is eggless Indian shortbread cookies made with maida,almond flour,sooji and gram flour. Crispy,flaky and delicious!

  • 1 cup all purpose flour/maida
  • 1/2 cup almond flour coarsely ground
  • 1/2 cup sooji/rava
  • 1/2 cup gram flour
  • 1 1/4 cup powdered sugar
  • 3/4 cup ghee
  • 2 tablespoons milk
  • 1/2 teaspoon cardamom powder
  • 1/8 teaspoon saffron
  • 1/8 teaspoon salt


  • Take sugar,saffron,milk and ghee in a bowl and beat well. Add cardamom powder and mix well.
  • Add roasted gram flour,rava and maida and mix well. Add salt,coarsely ground almond flour and ix with your finger tips. Mix well and bring together and make dough. Do not add water. Knead just the flours are mixed properly.
  • Preheat oven to 170C. Make about 20-22 equal sized balls from the dough and flatten slightly.
  • Arrange the cookies on a greased baking sheet and press almond slivers on each cookie
  • Bake the cookies for 12-15 minutes in a preheated oven at 170C.
  • Let the cookies cool down for 10 minutes. Serve nan khatai with tea/coffee or store airtight.


1. You can use pistachio flour or a combination of almond-pistachio flour in this recipe.
2.If you don't have ghee you can use melted butter but the taste will surely change.
3 Make the balls as smooth as possible else there will be cracks in baked cookies
