Rinse and saok basmati rice in enough water for 1-2 hours. In the mean time chop the washed vegetables into uniform cubes.
Take washed mint leaves, cumin seeds, peeled ginger and green chilies in a small mixer jar. Grind to a smooth paste without water.
Heat 2 tablespoons oil in a big pressure cooker. Add cumin seeds, fennel seeds and let them crackle. Add bay leaf, black cardamom, green cardamom, cloves and cinnamon stick. Saute well till aroma wafts out.
Add finely chopped onions and saute till the color changes slightly.
Add the cubes vegetables and saute well for 2-3 minutes.
next add the prepared pudina spice paste and coat the veggies well.
Drain the rice and add the vegetables. Mix well and saute well for 5-6 minutes.
Add 3 cups water and required salt.
Close the pressure cooker and pressure cook for 2-3 whistles. Once the pressure is released, open an mix gently. Serve pudina pulao hot with any side dish and raita.
