Ingredients

  • 1/2 cup almonds
  • 1/4 cup +1 tablespoon sugar
  • 1/8 cup water
  • 6-7 saffron strands
  • 1/4 teaspoon cardamom powder
  • Few drops of ghee or oil

Instructions

  • Soak almonds in boiling water for 30-45minutes. Peel and dry roast for few minutes.
  • Grind the almonds well without adding water. It is ok if the almonds are a bit sticky.
  • Combine water and sugar in pan. Mix well and start cooking in low flame till the syrup reaches half string consistency( around 7 minutes)
  • Add the ground almonds and mix well Cook in low flame till the mixture starts to thicken.
  • Keep a tray ready by greasing it with few drops of ghee or oil. Continue to cook the almond sugar mixture till it turns to a soft mass. Add crushed saffron and cardamom powder, mix well.
  • Once the mixture turns to a soft mass and leaves the side of the pan, immediately switch of the heat but continue to stir for few more minutes. Transfer to the greased plate and level.
  • Allow to cool for 10 minutes before making slices. Once warm make slices and serve or store badam burfi airtight. Keeps well for about a week at room temperature.

Notes

1. This burfi has grainy texture, if you want to make smooth burfi grind almonds to a smooth paste by adding little water.
2. You can add nutmeg powder for flavoring.
3. If you want to make soft burfi like kathli, you can let the mixture become warm and then knead it well just like kaju kati
