Vegetarian Fajita Recipe

Vegetarian fajita recipe made at home from scratch with soft tortillas, flavorful fajita vegetables and a simple salsa. This is a wonderful dish for those who are trying to add more vegetables in their diet in a delicious way

Ingredients

  • 6-8 tablespoons fresh tomato salsa
  • 6 tortillas corn or flour
  • 1/2 green bell pepper cut into thin strips

For Fajita Vegetable

  • 1/2 yellow bell pepper cut into thin strips
  • 1/2 green bell pepper cut into thin strips
  • 100 grams paneer cut into thin strips
  • 2-3 garlic cloves minced
  • 1 tablespoon tomato ketchup
  • 1 small onion finely chopped
  • 1 small tomato finely chopped
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon pepper powder
  • 1 tablespoon fajita seasoning
  • Salt

How To Make Fajita Vegetables

  • To prepare vegetable stuffing, cut bell peppers into thin strips. Cut paneer into thin strips, chop the onions and mince the garlic.
  • Heat 2 teaspoons oil in a cast iron skillet or any pan. (I used olive oil). Fry the garlic for 3-4 seconds. Add the onions and saute for 2-3 minutes. Add finely chopped tomatoes and saute for few minutes.
  • Add the chopped bell peppers and mix well and saute. Add salt, fajita seasoning or a mix of pepper powder, cumin powder and mix well.
  • Add paneer strips and saute well for few minutes in medium heat. Add fresh cilantro leaves and remove from flame.

How To Make Vegetarian Fajitas

  • Warm a store bought or homemade tortilla for few seconds on a warm skillet preferably in a cast iron pan on medium high heat.
  • Place required amount of prepared fajita vegetables. Also add some salsa. Now you can add shredded cheese or a dollop of sour cream. Insteas of sour cream I sometimes add a tablespoon of plain greek yogurt with a dash of freshly cracked black pepper.
  • Close from both sides, secure with a tissue and serve immediately. You could also sprinkle some more fajita seasoning, Mexican spice mix or even smoked paprika for more zing.

Notes

Variations You Can Try

With pinto beans

Instead of adding fajita vegetables you can make a pinto beans filling with fajita seasoning. You can also toss in half cup cooked pinto beans or even kidney beans along with vegetables. You can also use black beans or any lentils too.

With Portobello mushrooms

To make this dish more substantial or protein rich you can make quick filling with portobella mushrooms or any variety of mushrooms like white mushrooms. Some crushed red pepper tastes super delicious.

Vegan Fajita Vegetables

The base recipe as such is vegan so you can either skip cheese and sour cream or just use vegan sour cream and shredded vegan cheese.
