Cauliflower Rice Recipe (Cauliflower Pulao Recipe)

Ingredients

  • 1 medium sized cauliflower head florets separated
  • 1.5 cups basmati rice
  • 1/2 cup green peas
  • 1/2 green bell pepper finely chopped
  • 1 onion finely chopped
  • 2 green chillies
  • 1 " ginger peeled and finely chopped
  • 1 teaspoon chili powder
  • Salt
  • Oil

Whole Spices

  • Whole spices:
  • 1/2 inch cinnamon stick
  • 2 green cardamoms
  • 1 black cardamom
  • 2 cloves

Instructions

  • Soak, drain and cook basmati rice. Cool thoroughly.
  • Par boil cauliflower and shelled green peas with little salt and turmeric powder. Drian and set aside.
  • heat 1 tablespoon oil in a pan and saute the par boiled cauliflower florets till color changes slightly. Set aside.
  • In the same oil while it is still hot, add cumin seeds and let it crackle. Add green chillies and finely chopped ginger. Saute well till the raw smell goes off.
  • Add whole spices and saute for few minutes. Add finely chopped onions and saute well till the color changes into golden brown.
  • Add finely chopped green bell peppers and saute very well.
  • Add fried cauliflower florets,salt ,chilli powder and saute well for 5-7 minutes till the raw smell of chilli powder goes off.
  • Add Cooled rice and 1 teaspoon oil or ghee. Mix gently.
  • Serve cauliflower rice hot or pack in tiffin after it cools slightly.

Notes

1. You can deep fry the cauliflower florets if you wish.
2. You can add ghee instead of oil.
