Ingredients

  • For outer cover:
  • 1/2 cup rice flour/kozhukattai flour
  • Very hot water
  • Salt
  • ¼ teaspoon oil
  • For filling/poornam
  • 1/2 cup grated coconut
  • 1/4 cup grated jaggery tightly packed
  • 1/4 teaspoon cardamom powder.

Instructions

  • Add 1/4 cup water to grated jaggery and boil. Boil very well till the jaggery dissolves and thicken well. No need to check for string consistency, just a thick jaggery syrup. Filter the syrup.
  • Dry roast the grated coconut for few minutes. Add the filtered syrup and mix well. The mixture should not be very running. You should be able to form a loose ball with the mixture. The jaggery syrup should be thick enough. Divide the poornam into 6-7 equal portions and set aside.
  • In the meanwhile boil around 1 cup water. It should boil vigorously.
  • Take the rice flour in a mixing bowl. Add salt, oil and mix well. Add the hot water little by little and mix well with a spoon. Allow to cool for few minutes.
  • Knead to a smooth dough. Divide the dough into 6-7 equal sized balls.
  • Apply oil in your palams and take one dough ball. Shape it like a shallow cup and place one poornam. Cover from all sides and seal. Repeat the same with
  • Steam the prepared modak in a steamer or idli plate for 10-12 minutes. The modak will be shiny and non sticky once done. Serve modak hot or warm.

Notes

1.Do not make a very loose dough, the kozhukattai will crack after steaming.
2.Keep the dough covered until use.
3. If the pooran is very watery you can add 1/2 teaspoon rice flour and mix well.
