Ingredients

  • 1 cup basmati rice cooked and cooled
  • 1 cup sprouted mixed beans cooked
  • 1 medium onion chopped fine
  • 1 large tomato chopped fine
  • 1 small capsicum chopped fine
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon coriander powder
  • Salt
  • To temper:
  • 2-3 teaspoons oil
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon peeled and crushed ginger
  • 2-3 green chillies

Instructions

  • Pressure cook rice and sprouted mixed beans separately and set aside. Let the rice cool thoroughly.
  • Heat a heavy wok or pan add 2-3 teaspoons oil to it. Once the oil is hot add the ingredients mentioned in "to temper" one by one and saute well.
  • Add the chopped onions and saute well till it changes color slightly.
  • Add the chopped tomatoes and saute well till it turns mushy.
  • Add the capsicum and saute for 3-4 minutes.
  • Add the cooked sprouted mixed beans,garam masala,salt,coriander powder,turmeric powder and saute well till the raw smell goes off.
  • Add the cooked rice,mix gently without breaking the rice and serve sprouts pulao hot.

Notes

1. You can add curd for sour taste instead of tomatoes.
2.You can add any gren leaves like mint,methi leaves along with capsicum to improve nutrition and taste
