Ingredients

  • 2 3/4 cup whole wheat flour
  • 1 1/2 teaspoons active dry yeast
  • 2 tablespoons olive oil
  • Salt
  • 1/2 teaspoon sugar
  • 3/4 cup + 1/2 cup warm water

Instructions

  • Take 1/2 cup luke warm water in a bowl and add sugar to it. Once the sugar is dissolved sprinkle yeast over it and keep it disturbed for 10 minutes. By now the yeast would have become active and frothy.
  • Measure the whole wheat flour and take in a mixing bowl. Add salt,oil and mix well with a spoon.
  • Now add the yeast water and mix well. Slowly add the remaining 3/4 cup water and knead to smooth and soft dough.
  • Rest the dough in warm place for 90 minutes or until it doubles in volume. After 90 minutes the dough have raised as seen in the pic.
  • Make 10 equal sized balls as you would make for pooris and let it raise for 10 minutes. In the mean time preheat oven t0 250C (maximum temperature)
  • Take one dough ball at a time and roll into a small oval shaped flat bread of 1/4" thickness. Do not roll them very thin.
  • Arrange the rolled discs in a baking tray and bake for 10-12 minutes. The pita breads will puff up well.
  • Once done keep the pita bread covered loosely until serving.
  • To serve as falafel sandwich,cut the pita bread in the center and stuff with raw sliced veggies,kabab and hummus. Serve whole wheat pita bread recipe warm or at room temperature.

Notes

1. If you make the rolls very thin the bread will char very fast and turn crispy.
2. To get nice pockets,the thickness should be uniform.
3. Here I have baked the bread for 12 minutes,if you do not want char marks bake for 10 minutes.
