Aloo 65 recipe is a famous snack/starter recipe with potatoes. Par boiled potatoes are coated with batter and shallow fried,then tossed with curry leaves and lemon juice

Ingredients

  • 2 large potatoes
  • 4 tablespoons maida
  • 3 tablespoons corn flour
  • 1/2 teaspoon chilli powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon chaat masala powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon lemon juice
  • 10-12 curry leaves
  • Salt
  • 3 tablespoons oil

Instructions

  • Par boil potatoes,peel and cut into bite size cubes. I pressure cooked the potatoes without water for 3 whistles.
  • Take corn flour,maida,salt,chilli powder,crushed ginger,chaat masala powde,coriander powder,roasted cumin powder and turmeric powder in a mixing bowl. Add water and make a thick batter without lumps.
  • Heat 3 tablespoons oil in a shallow frying pan. Mix the potato cubes in the batter and gently coat each piece with the batter.
  • Slide the potato cube in the hot oil,do not over crowd the pan,shallow fry the potatoes until golden brown from both sides.
  • Once you are done with the potatoes,in the same oil fry the curry leaves,crush slightly and add to the fried potatoes.
  • Mix well,add lemon juice and toss well. Serve aloo 65 hot.

Notes

1. You can deep fry instead of shallow frying.
2. You can use 2 tablespoons curd and reduce water for making batter.
3. Shallow frying takes time so make sure to fry all the sides nicely.
4. The color is light here as I have not added food color.
