Corn potato open toast recipe is a very simple to make snack with bread,corn and potatoes. Creamy corn toast without any cheese!

Ingredients

  • 6 bread slices
  • 1 large potato boiled and mashed
  • 1/2 cup sweet corm kernels boiled and drained
  • 1/8 cup methi leaves optional
  • 1/2 teaspoon pepper powder
  • 1/4 teaspoon chaat masala powder
  • 2 teaspoons water
  • Olive oil
  • Salt

Instructions

  • Pressure cook the potatoes until very soft and peel them, Mash the potatoes very well,they should be very smooth,there should be no small bits.
  • Pressure corn kernels,drain and set aside.
  • Take the mashed potatoes,add the corn kernels,washed methi leaves,salt,pepper powder and chaat masala powder. Mix well with a spoon,if the mixture appears very dry add 1-2 teaspoons water/milk and mix well.
  • Take the bread slices and trim the edges. Apply some olive oil/butter on one side and spread the potato mixture in an even manner.
  • Heat a grill pan/tava and place the bread slice. Toast for 2-3 minutes,flip gently and toast for 3 more minutes.
  • Repeat with all the bread slices and serve cor potato open toast hot with sauce/green chutney

Notes

1. Use water only if the mixture is dry and if you are unable to spread on the bread slice.
2. Mash the potatoes really well to get creamy toast
3. You can leave out or use any greens instead of methi leaves.
4. You can add finely chopped green chillies instead of pepper powder.
