Eggless fruit cookies recipe | tutti frutti cookies recipe

Eggless fruit cookies are crucnhy,thick short bread kind of cookies made with candid fruits. Very easy and simple recipe!

Ingredients

  • 1 cup all purpose flour/maida
  • 7 tablespoons butter room temp
  • 1/3 cup tutti frutti
  • 1/2 cup powdered sugar
  • 1 vanila bean scrapped optional
  • 1 tablespoon milk only if needed

Instructions

  • Take the powdered sugar and soft butter in a mixig bowl. Add the scrapped pith from the vanilla bean to it and mix well. Now beat this in the same direction until the mixture become very soft,light and creamy.
  • To this add the flour and mix well. Add the tutti frutti and mix well.
  • Now bring this together in the form of dough,no need to add water,the dough will be very soft and a bit sticky.
  • Spread the dough on a butter paper and shape it into 2 small logs. Close with the same paper and freeze for 30-60 minutes.
  • Preheat oven at 160C (350F) 15 minutes before you want to bake the cookies.
  • Take the froze log and cut into small circles,a bit dense than you would for other cookies.
  • Arrange the cut cookies on a baking tray and bake for 10-15 minutes. Allow them to cool for 5 minutes and then store the eggless fruit cookies airtight.

Notes

1. Vanilla is optional,you can add cinnamon or any other flavoring too
2. Add milk only if needed,the dough itself will be very sticky,no need to knead the dough,just bring it together
