Potato podi curry recipe is an easy to make vegan side dish for rice/roti,no onion garlic recipe!

Ingredients

  • 2 large OR 3 medium potatoes
  • 1 1/2 teaspoons sambar powder
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon asafoetida
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon urad dal
  • Salt
  • Curry leaves
  • Oil

Instructions

  • Wash and scrub the potatoes thoroughly. Chop them into cubes (no need to peel the skin)
  • Heat 2 tablespoons oil in a kadai and temper with mustard,urad dal,curry leaves and asafoetida. Add turmeric powder,sambar powder to the oil and saute fir2-3 minutes.
  • Add the cubed potatoes and mix well. Saute in medium flame for 10-12 minutes. Add salt and sprinkle some water (if making in small quantity,no need to sprinkle water). Mix well and keep sauteing in regular intervals for 10 more minutes until done
  • Serve potato podi curry with rasam/sambar rice.

Notes

1.Adding sambar powder directly to the oil is to remove the raw smell and also to tame the heat factor.
2. You ca add finely chopped onions instead of asafoetida
