Sweet corn sundal recipe is an easy sundal to make for navrathri.It is prepared using boiled sweet corn,coconut and Indian tempering.

Ingredients

  • 1 cup sweet corn kernels
  • 1/4 cup grated coconut
  • 2 dried red chillies
  • 2 green chillies
  • 1 teaspoon urad channa dal
  • 1/2 taspoon mustard seeds
  • 1/4 teaspoon asafoetida
  • 1/4 teaspoon sugar
  • salt
  • 10-12 curry leaves
  • 3 teaspoons oil

Instructions

  • Pressure cook sweet corn kernels for 3-4 whistles.They should be cooked well. Drain and set aside.
  • Heat 3 teaspoons oil in a kadai and temper with mustard,urad,channa dal,curry leaves and asafoetida
  • Add green chillies,dried red chillies and mix well. Add the cooked sweet corn and mix well.
  • Add salt,sugar and mix well.Saute for 3-4 minutes.
  • Allow the flavors to mingle for 10 minutes,keep the pan closed.
  • Add the shredded coconut just before serving and mix well

Notes

1.You ca use naatu solam (makka solam) in this recipe.if using dried one's be sure to soak for 6-8 hours before cooking.
2.It is always better to ad coconut just before serving to prevent sundal from getting soggy
3,Adjust the chillies according to the taste and quantity you are making.
