Ingredients

  • 6-8 baby corns.
  • 1 large onion cubed
  • 1 large green bell pepper cubed
  • 1 large tomato very finely chopped
  • 1 " ginger crushed
  • 1/2 teaspoon black pepper powder
  • 1/2 teaspoon chilli powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon sugar
  • Salt
  • oil to temper

Instructions

  • Peel,chop and boil baby corn.Drain and set aside
  • Chop one large tomato,very finely.Chop 1 large onions into cubes.Chop the bell pepper into cubes
  • Heat 3 teaspoons oil in a kadai and temper with cumin and chilli flakes.Add the crushed ginger and saute for 2 minutes.
  • Add the cubed onions and saute for 2-3 minutes in high flame.Next add the finely chopped tomatoes,sugar ad a pinch of pepper powder.Saute till the tomatoes turn mushy.
  • Add the cubed bell peppers and saute for2-3 minutes.
  • Next add the baby corn pieces,salt and chilli powder.Saute quickly to coat the baby corn with tomato.Saute for not more than 5 minutes,remove from flame and serve hot

Notes

1.Instead of fresh tomato,you can use tomato sauce,in that case skip sugar and pepper.
2. You can different colored bell peppers
3.You can add some lemon juice towards the end if you want a hint of tang.
