Temper cumin seeds in hot oil. Add crushed ginger garlic and saute till raw smell goes off.
Add chopped onions and saute till it turns soft.
Now add the tomato paste and mix well.
Next we add the spice powders and chili powder. Add cumin powder, garam masala powder, coriander powder, turmeric powder and chilli powder.
Saute well till the spice powders blend well with tomato paste and fat is released from sides.
Now add 1 cup water. You can add water to the mixer jar you used to make tomato paste and use that. Mix well and simmer for 7-8 minutes.
Reduce the flame to lowest. Add well whisked curd and keep stirring continuously until very well combined.
Add 1/2 cup water and season with salt. Mix well and simmer for 5 minutes.
Then sauteed okra pieces and mix gently. Simmer for a minute or two.
Now add some fresh cream if desired. Mix well. Finally add crushed kasuri methi and mix well. Serve dahi bhindi hot or warm.
