palak pakoda is an easy and quick snack made with whole spinach leaves, gram flour and Indian spices. Excellent snack to serve with tea during monsoons.

- 12 palak leaves spinach leaves
- 3/4 cup gram flour , besan or chickpea flour
- 1/4 cup rice flour
- 1/2 teaspoon chili powder
- 1/4 teaspoon asafoetida OR carom seeds
- Salt to taste
- Water for making batter
- 1/2 teaspoon chaat masala powder optional
- lemon wedges to serve
Gently rinse and clean the spinach leaves. Pat dry without tearing them. Also remove the thick stalk if any.
Heat oil for deep frying palak pakoda. While the oil is heating prepare the batter for pakoda.
Into a bowl, mix gram flour, rice flour, chili powder, asafoetida, salt. Mix well.
Gradually add water and mix into a lump free batter. Dip one spinach leaf at a time into the batter. Coat well.
Gently drop in the hot oil and deep fry in medium flame until golden from both sides.
Finish frying all the leaves in the same way. Gently drain excess oil and serve palak pakora hot. You can sprinkle some chaat masala powder and serve with lemon wedges.
