palak pakoda is an easy and quick snack made with whole spinach leaves, gram flour and Indian spices. Excellent snack to serve with tea during monsoons.

Ingredients

  • 12 palak leaves spinach leaves
  • 3/4 cup gram flour , besan or chickpea flour
  • 1/4 cup rice flour
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon asafoetida OR carom seeds
  • Salt to taste
  • Water for making batter
  • 1/2 teaspoon chaat masala powder optional
  • lemon wedges to serve

Instructions

  • Gently rinse and clean the spinach leaves. Pat dry without tearing them. Also remove the thick stalk if any.
  • Heat oil for deep frying palak pakoda. While the oil is heating prepare the batter for pakoda.
  • Into a bowl, mix gram flour, rice flour, chili powder, asafoetida, salt. Mix well.
  • Gradually add water and mix into a lump free batter. Dip one spinach leaf at a time into the batter. Coat well.
  • Gently drop in the hot oil and deep fry in medium flame until golden from both sides.
  • Finish frying all the leaves in the same way. Gently drain excess oil and serve palak pakora hot. You can sprinkle some chaat masala powder and serve with lemon wedges.
