Matar ki kheer recipe

Ingredients

  • 1 cup green peas
  • pinch of sugar
  • 10 cashews
  • 1/4 cup sugar
  • 2 cups whole milk boiled
  • 1/2 teaspoon cardamom powder
  • few saffron strands
  • Toasted chopped nuts optional

Instructions

  • Shell and rinse the green peas once or twice.
  • Bring whole milk to a boil and set aside.
  • Add to the boiling water with a pinch of sugar and cook for 7-8 minutes. The peas should be soft and tender. Drain and rinse under cold running water.
  • Transfer the green peas to a mixer jar. Add cashews, sugar and 1/8 cup boiled milk. Grind to a smooth puree.
  • Add the green peas puree to the remaining milk and bring to a boil. Simmer for 6-7 minutes until the kheer thickens a bit.
  • Add cardamom powder and saffron strands. Simmer for 2 more minutes. Remove from flame. Add toasted nuts if using, Serve matar ki kheer hot or chilled.

Notes

This kheer keeps well for 2 days in refrigerator.
