Ingredients
1cupgreen peas
pinch of sugar
10cashews
1/4cupsugar
2cupswhole milkboiled
1/2teaspooncardamom powder
few saffron strands
Toasted chopped nutsoptional
Instructions
Shell and rinse the green peas once or twice.
Bring whole milk to a boil and set aside.
Add to the boiling water with a pinch of sugar and cook for 7-8 minutes. The peas should be soft and tender. Drain and rinse under cold running water.
Transfer the green peas to a mixer jar. Add cashews, sugar and 1/8 cup boiled milk. Grind to a smooth puree.
Add the green peas puree to the remaining milk and bring to a boil. Simmer for 6-7 minutes until the kheer thickens a bit.
Add cardamom powder and saffron strands. Simmer for 2 more minutes. Remove from flame. Add toasted nuts if using, Serve matar ki kheer hot or chilled.
