Ingredients

  • 250 grams okra/ vendakkai/bhindi
  • 1 onion chopped
  • 1 tablespoon besan or gram flour
  • 2 tablespoons crushed roasted peanuts
  • 1 teaspoon chili powder
  • 1/4 teaspoon turmeric powder
  • Salt
  • 2 dried red chilies
  • 1 teaspoon urad dal
  • 1 teaspoon mustard seeds
  • 3 teaspoons oil

Instructions

  • Wash and pat dry the okras.
  • Chop off the head and tail. Slice into rounds.
  • Heat a pan with 3 teaspoons oil.
  • Temper with mustard seeds, urad dal, dried red chilies. Add chopped onions and saute till they turn soft.
  • Add chopped vendakkai and mix well. Add salt, turmeric powder, chili powder and mix well.
  • Cook in medium flame for 8-9 minutes.
  • Add gram flour or besan and cook for 3-4 minutes.
  • Add roasted crushed peanuts. Mix and cook for 2 minutes. Remove from flame and serve okra fry hot.
