- 1 cup raw whole cashews
- 1 cup sugar
- 1/2 cup water
- 1/2 teaspoon cardamom powder optional.
Dry roast cashews for 4-5 minutes.
Heat 1 cup sugar with 1/2 cup water until 1 string consistency is reached. You can leave 1.5 string consistency too .
Switch off the heat and add the roasted cashews. Keep mixing throughout for 5-7 minutes.
Transfer to a plate and spread as single layer. The sugar will crystallize and form a coating on cashews on cooling. Cool thoroughly and store in airtight container. Serve nokkal as snack.
