Take 4 tablespoons melted butter in a mixing bowl. Add 6-7 crumbled digestive biscuits to it and mix well.
Take 2-3 clean and dry dessert jars or wide serving glass. Press the biscuit base at the bottom and press evenly. Chill in fridge for 20 minutes.
In the mean time heat 5 grams agar agar with 4 tablespoons water in low flame. Mix and stir till it is thoroughly dissolved. Set aside.
Puree the washed and hulled strawberries with 2 tablespoons sugar and set aside.
Take Soft cream cheese, fresh cream and 1/4 cup sugar in a mixing bowl. Mix and whisk well. Add 3/4 of the prepared strawberry puree and mix well.
Now add the prepared agar agar to this cream cheese strawberry mixture. Take the dessert jars with biscuit base and spoon in this strawberry mixture evenly. leave some space for third layer. Chill for 2 hours.
Now heat 2 grams agar agar with 2 tablespoons water until dissolved. Add this to the reserved strawberry puree. Add this strawberry puree evenly over the set cheesecake. Return to the fridge and chill for 3-4 hours before serving. Serve strawberry cheesecake cold.
Notes
1. You can slightly cook the strawberry syrup to intensify the flavor. 2. You can use raspberry in place of strawberry.
