Ingredients

  • For dough
  • 1 cup whole wheat flour
  • 2 teaspoons oil
  • Salt
  • Water
  • For filling
  • 1 cup boiled peeled and roughly chopped veggies( potatoes, carrots and green peas)
  • 1 medium onion chopped
  • 1/2 teaspoon minced ginger
  • 2 green chilies
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon turmeric powder
  • Salt
  • Lemon juice
  • Grated cheese

Instructions

  • Make a dough with 1 cup whole wheat flour, 2 teaspoons oil and required salt. No need for a very soft dough. Knead like how you would for poori. Let it rest for 30 minutes.
  • To make filling, heat 2 teaspoons oil in a pan. Temper with cumin seeds. Ad ginger green chilies and saute well. Add the boiled, peeled and roughly chopped potatoes and carrots. Add boiled peas. Mix well and mash as it gets cooked. Season with salt. Add chili powder, garam masala and turmeric powder. Mix well and cook for 5-7 minutes in medium flame. Remove from flame and add lemon juice. Let cool.
  • Now take the dough and roll it into a thin big circle.
  • Spread the filling all over.
  • Roll it into tight log. Cover and chill for 30 minutes.
  • Preheat oven at 180C when you are ready to bake.
  • Cut the log into 12-15 equal pieces. Arrange on a greased baking tray. Sprinkle cheese on top. Bake in hot oven for 15-20 minutes. The cheese should melt and turn golden brown. Serve baked pinwheels hot.

Notes

1. You can make a dry filling of your choice
2. You can even deep fry the cut pinwheels
