  • 12 bread slices
  • 2 tablespoons soft butter
  • Grated cheese
  • For filling
  • 2 cups spinach leaves tightly packed
  • 1 cup boiled corn kernels
  • 1 cup boiled and cooled milk
  • 1/8 teaspoon nutmeg powder
  • 1/2 teaspoon pepper powder
  • 1/2 teaspoon chili flakes
  • dried oregano
  • 1/2 teaspoon finely chopped garlic
  • 2 teaspoon butter


  • Pick and wash the spinach leaves very well. Blanch spinach leaves with 1/4 teaspoon sugar. Drain and chop the spinach leaves finely.
  • Heat 2 teaspoons butter in a pan. Add chopped garlic and saute very well. Add the boiled corn kernels and saute well.
  • Add the finely chopped spinach leaves and saute well for 2 minutes. Add 1 tablespoon all purpose flour and mix well.
  • keep the flame in low and slowly add the cold milk. Mix very well so that no lumps are formed.
  • Maintain low flame and saute well. Add pepper powder, oregano powder and mix well.
  • Mix well and cook till the whole mixture thickens. Once the mixture is thick switch off the flame. Add salt and chili flakes and mix well.
  • Now take a bread slice and apply some butter to it. Keep 2 tablespoons of prepared filling,top with grated cheese and close with another bread. grill/toast the prepared sandwich. Repeat the procedure to prepare more sandwiches. Serve spinach corn sandwich recipe hot.


1. You can serve plain sandwich instead of grilling or toasting.
2. You can add some grated cheese in the filling too
