Semolina cookies recipe, crispy, crumbly and delicate local akery style semolina cookies with tutti frutti
whole wheat flour
Preheat oven at 170C. Take soft butter and sugar in a mixing bowl. Cream well until the mixture turns light and fluffy.
Add wheat flour, rava, baking powder and mix well.
Add tutti frutti and mix well. bring together and knead lightly. Add cardamom powder and rose essence. If needed add 2-3 tablespoons of milk.
Scoop out equal sized balls from the cookie dough. I used a tablespoon spoon for uniform sized cookies.
Place the cookie balls in a greased baking sheet.
Bake in the preheated oven for 12- 15 minutes. Be watchful as the color of the cookies will remain white. If you leave for long time in the oven cookies will burn and turn hard.
Once baked cool the cookies thoroughly before storing airtight. Serve semolina cookies as snack with coffee
1. You can add nutmeg powder too in place of cardamom.
2. You can add kewra essence instead of rose essence.
