Goli baje recipe or Mangalore bonda is an easy and tasty deep fried snack made of flour and sour curd. Easy no grind snack to serve with tea/coffee

Ingredients

  • 1 1/4 cup al purpose flour
  • 1/8 cup gram flour1/8 cup rice/corn flour
  • 3/4 cup +1 tablespoon curd
  • 2 tablespoons coconut pieces
  • 20 curry leaves torn
  • 3-4 green chillies chopped fine
  • 1/2 teaspoon crushed ginger
  • Tiny pinch of fruit salt
  • Salt
  • Oil for deep frying

Instructions

  • Dry roast gram flour without changing color until nice aroma wafts out.
  • Take roasted gram flour,all purpose flour and rice flour in a mixing bowl. Add salt and mix well.
  • Add the whisked curd and mix well,beat well so that the batter is lump free. Add fruit salt and mix well. Keep the batter covered for 10 minutes-1 hour.
  • Heat oil for deep frying. Add crushed ginger,coconut pieces,torn curry leaves and chopped green chillies to the batter and mix well.
  • Drop spoon full of batter into the hot oil and deep fry till golden from both sides.Do thr frying in the medium flame.
  • Remove the fried bondas to a tissue to absorb excess oil. Serve goli baje or Mangalore bonda hot.

Notes

1 Rice flour/corn flour is added for crispiness and it is optional.
2. Instead of fruit salt you can add cooking/baking soda
