Ingredients
2large potatoesboiled, peeled and cubed
2teaspoonsrice flour
1teaspoonchili powder
1/4teaspoonturmeric powder
Salt
4-8garlic podspeeled and minced
1large onionthinly sliced
10-12curry leaves
1teaspoonmustard seeds
1teaspoonfennel seeds
tablespoon + 1 teaspoon gingely oil.
Instructions
Boil or steam the potatoes. peel the skin and cube the potatoes.
Take the cubed potatoes in a mixing bowl. Add salt, turmeric powder, chili powder and 1 teaspoon oil. Mix and toss well. Add 2 teaspoons rice flour and toss well too.
Heat 1 tablespoon gingely oil in a kadai. Add mustard seeds and let them splutter. Add fennel seeds and saute well. Add curry leaves, minced garlic and saute well. Add finely chopped onions and saute till color changes slightly.
Add the potatoes and saute well. Saute and cook in medium flame till the potatoes turn crispy. Serve garlic potato fry hot with rice and rasam.

1. Adding gingely oil gives authentic flavor and taste. 2. You can increase/decease amount of garlic
