Take 3-4 big strawberries, wash and hull. Mash them very well with your hands. Do not puree or grind. Just mashing with hands will do.
Take sugar and softened butter in a mixing bowl. Beat well till the mixture turns light and creamy.
Add mashed strawberries, vanilla extract and mix well.
Add all purpose flour, custard powder, baking powder and mix well.
Once everything is mixed well, knead the dough well for 3-4 minutes. The dough will be very soft and sticky. Now refrigerate the dough for 30 minutes.
Preheat oven at 180C. Take the dough out and knead lightly.
Divide the dough into 15 equal sizes. I used a tablespoon to scoop out the dough ad got exactly 15 cookies. Roll each portion smoothly and flatten slightly.
Arrange in a cookie tray, leave enough space between each cookie.
Bake i the preheated oven for 10-12 minutes. My cookies were done in 12 minutes. Remove from oven and allow the cookies to cool thoroughly. Store strawberry cookies in airtight container.
