Ingredients

  • 1.25 cup pasta
  • 3 large tomatoes
  • 1 onion finely chopped
  • 1/2 teaspoon pepper powder
  • 1/2 teaspoon chili flakes
  • 1 teaspoon sugar
  • 1/2 teaspoon finely chopped garlic cloves
  • Grated parmesan for serving
  • Salt
  • 3 teaspoons olive oil

Instructions

  • Cook pasta as per package instructions. Drain and reserve about 1/2 cup of water used for cooking pasta. Keep the cooked pasta covered until use.
  • Bring plenty of water to boil. Add the tomatoes to the boiling water and cook for 5 minutes. Drain and peel the tomatoes.
  • Grind the peeled tomatoes either very smooth or a bit chunky as you prefer. Set aside.
  • Heat 3 teaspoons olive oil in a pan. Add crushed chili flakes, garlic and saute well. Add chopped onions and saute till the onion turns slightly brown.
  • Add the tomato puree and mix well. Add salt, dried or fresh basil leaves, pepper powder, sugar and mix well. Cook for 5-7 minutes.
  • Add pasta cooking water and mix well. Cook till the sauce thickens as per your preference.
  • Add the cooked pasta and toss well. Sprinkle grated cheese and serve penne arrabiata immediately.

Notes

1. Make sure not to over cook the pasta, if over cooked the whole dish will turn mushy.
2. You can add dried past herbs too along with basil.
3. If you do not have parmesan cheese you can just top with normal grated cheese or skip it too.
